After a brief glimpse of the sun in recent weeks we can fully begin to believe the summer is here. Schools are finishing, the tennis is on and we have the added bonus of an Olympics. We’ve not forgotten the football but it’s simply too stressful to talk about.
There is change everywhere and not just in Westminster but in the produce and ingredients we use.
Cherries are ripening, they are wonderful to eat as they are but great to cook with. If you like baking then it’s a time for making clafoutis or crumbles. You can also simply just drop them into your sparkling wine too and they make a lovely addition to your drinks parties.
Lots of wonderful vegetables are coming through too. Beetroot in particular are delicious and the summer salad on our main menu is a wonderful expression of the summer. In our oceans the stocks of fish are moving. The shoals of cuttlefish are moving on being followed by the cod which feed on them so its the ideal time to to order our cod with ‘ratatouille’ dressing and confit lemon.

Strawberry Eton Mess, Crumble & Mint.
Sweet and fruity, full of voluminous cream and meringue.
This is our impression of a true English classic. Originally created as one of those happy accidents, the Eton mess is a symbol of British summertime. Rumour has it it was the result of a bumpy car ride and a not so well secured pavlova.
Texture in our version comes from both the meringue but also the crumble topping.
The final touch of fresh mint gives hints of Pimms on the lawn.
Shut your eyes and imagine the sound the leather and willow or the to and fro of a Wimbledon final.

Why not pair the Eton Mess with something a little different. Sherry comes in all flavours from bone dry to rich and sweet.
The Solera Cesar Florido Moscatel Doroda from Jerez is of the sweet variety. It comes from one of the oldest Bodegas in the region (which means they know what they are doing!).
It has spent 3 years maturing and its golden colour underpins rich, lush grapey aromas balanced with dried fruits and subtle nuttiness.
Alternatively a Sauternes is a more traditional accompaniment and the 2017 Castelnau de Suduiraut will more than do the job.

The team are passionate about their wine. We specialise in small producers who make their wines with low intervention methods, often organically and with sustainability in mind. Many use biodynamic methods to create small volumes which we love to share with you. Keep an eye out for our icon wines. These are wines of which we have only a few cases, so once they are gone… they are gone.
