If there is one ingredient that captures the quintessential nature of England it must surely be the apple? The majority of classic English puddings are made with it, we serve it with our pork and we even believe that one a day will keep your visits to the doctor to a bare minimum! We even owe our understanding of the universal force of gravity to the humble red/greenish fruit. And in September these delicious fruit start to make themselves noticeable.

There are nearly 2000 varieties grown in the UK (incidentally just 2 make up nearly 50% of the apples we buy – can you name them?). The National Fruit Collection at Brogdale Farm in Kent is well worth a visit if you want to see for yourself the wide variety of fruiit trees we have here. Our neighbours at the University of Reading help oversee the visitor programme and you can get more information on the National Fruit Collection website.

One of our favourites at FARE is the Bramley. Its firm sour flesh is perfect for puddings with the addition of sugar and it can hold its shape if you want to make a tart or even a Tatin with it. First seeded by Mary Ann Brailsford in her Nottinghamshire garden in 1809. They later took their name from a local butcher who bought her house containing that very first tree. The tree is still standing and bearing fruit we believe. You should keep your apples in the fridge not in a fruit bowl to make them last longer. They should stay fresh for a month or so but do give them a good scrub before you use them.

Apples mark the beginning of the Autumn season and herald a new collection of wonderful ingredients we will be sharing with you over the coming months.

Caramelised Apple Terrine, Tonka Bean Cremeux 

This new addition to our dessert menu is made from thin layers of compressed apple, topped with a tonka bean cream and grated apple. It’s finished with a rich sticky toffee stout sauce.

The Wine List

The team are passionate about their wine. We specialise in small producers who make their wines with low intervention methods, often organically and with sustainability in mind. Many use biodynamic methods to create small volumes which we love to share with you. Keep an eye out for our icon wines. These are wines of which we have only a few cases, so once they are gone… they are gone.
