It’s an olympic summer and whilst the Great British team continue to bring back a healthy medal haul, our thoughts are turning to the summer fruit and vegetables. The gold medal winners underground this month are beetroot.
There are many beautiful and colourful varieties on offer. The kitchen team at FARE, led by Josh, have found some delicious ones from our suppliers. They are wonderful in salads, sliced super thin, and have made a tasty new addition to our savoury Tatin dish this month.
Top of the podium in the fruit arena this month is the peach. It’s at the height of its powers and there are lots of varieties from the flat, white and the traditional furry skinned round ones we grow plenty of in the UK. They are super sweet and delicious on their own, Chloe our pastry queen at FARE, poaches them in sugar syrup and serves with our tonka bean pannacotta. In Italy they also slice them and add them to certain wines. They are so versatile and delicious.
Cooking at summer is all about simplicity. The food writer Elizabeth David wrote just that in her seminal work on summer cooking.
“Summer cooking implies a sense of immediacy, a capacity to capture the essence of the fleeting moment.”
That’s exactly what we’re about here at FARE in the summer.

Half Chicken, Chinese Cabbage & Satay Sauce.
The new addition to the robata grill menu is a smokey, spicy dish with savoury sauce packed full of umami.
The chicken is cooked directly over the coals and is glazed in a satay sauce. The cabbage is cooked in choucroute style so is pickled and full of flavour. The whole dish is finished and topped with a puffed rice, chickpea and salted peanut crumble.
Enjoy on its own or with a cold glass of Australian Chardonay

On Wednesdays to Fridays we are pairing our signature spritz menu with any one of our snacks for just £14.
So try one of Zoe’s delicious drink flavours from Limoncello, Lillet Blanc, Elderflower or the classic Aperol and enjoy a snack for just a couple of pounds more. We will be doing this all through the summer while the sun shines and our thirsts our high. So come and enjoy sitting on our sun terrace and watch the world go by.
The Wine List
The team are passionate about their wine. We specialise in small producers who make their wines with low intervention methods, often organically and with sustainability in mind. Many use biodynamic methods to create small volumes which we love to share with you. Keep an eye out for our icon wines. These are wines of which we have only a few cases, so once they are gone… they are gone.
